"Auguste" is the cuvée made in memory of Auguste Léger, ancestor of the family who was a nurseryman and owner of the plot at the beginning of the 20th century.

Tasting and Food-pairing
Taste and nose Pale yellow wine. Nose on notes of exotic fruits (mango, passion fruit…), citrus fruits (orange) and slightly mineral. Nice attack on the palate, round, full-bodied, fruity and final on hints of flint, revealing the soil of flint clay (ferruginous) of St Andelain. Slight bitterness bringing complexity to the wine and good aromatic persistence.
Food pairing This wine will go well as an aperitif with Crottins de Chavignol (traditional in the Center-Loire vineyard region), shellfish and seafood, as a main course either with fish and Hollandaise sauce or white meats with cream. Finally, it is accompanied by any type of not too refined dung.

Grape Variety Sauvignon Blanc
Soils/exposition 80% flint and 20% marls
Vinification Direct pressing followed by cold settling (below 4 °) for 5 days. 15-day alcoholic fermentation and vinification by terroir until blending. Aging in temperature-controlled stainless steel vats. Bottling starts around April.
