The 22 ha estate is located in Maimbray in the town of Sury-en-Vaux. The vineyard has been passed down for 4 generations now and embodies the ambitious new generation of the Sancerre vineyard. Quality and precision reflect the work of this estate with a desire to improve year after year the quality of the work in the vineyard (in conversion to organic farming) but also in the cellar with their traditional vintages and exemplary plots. Julien and Clément do not hesitate to work their wines in various and varied containers: stainless steel vats, Austrian tuns, demi-muids, 228l barrels, tapered vats.

Tasting and Food-pairing
Taste and nose A pale gold wine with a nice fruity and supple attack. It is both refreshing with its citrus notes but also delicious with hints of yellow fruits. Minerality enriches the aromatic palette of this wine.
Food pairing A harmonious and fresh cuvée, to be enjoyed with grilled fish, seafood and even as an aperitif.
Vintage 2020
Grape Variety Sauvignon Blanc
Soils/exposition Clay and limestone (70% Terres Blanches, 30% Caillottes)
Vinification Mechanical harvest. Long and soft pressing (around 3h30) with separation of the juices and separate vinification. Settling after 48 hours of cold stabilization (8 ° C). Yeast with neutral yeast. Fermentation in temperature-controlled stainless steel vats between 15 and 18 ° C for 3 weeks. Aging on fine lees with mixing of these if necessary. Racking and assembly the following spring. Bonding with bentonite (natural clay). Cellulose plate filtration and bottling after CO2 adjustment.
